The Nikkei Family Counseling Program (NFCP) and Emergency Caregivers Program (ECP) jointly formed the Tofu Cookbook Project and published the Original Tofu Cookbook "Four Seasons of Tofu" at our first LA Tofu Festival in 1996. This healthy tofu cookbook became one of the most popular items among festival participants. In response to the many requests received from tofu lovers last year, the project published a new edition of the cookbook with many new additional recipes. The Japanese version of the first original tofu cookbook was also published last year.
The sale of the tofu cookbooks helps to support the domestic violence project. This book was made possible through the support of House Food Corporation/Hinoichi Tofu, Sumitomo Bank of California, Union Bank of California, Toyo Printing, Iwate Printing Company and other resources. All the recipes were donated by LTSC staff and community members.
Tofu is becoming known as one of the best "health foods" around, and its adaptable taste and versatility are enhancing its popularity, as evidenced by the more than 1,000 books which were sold at last year's Tofu Festival. This cookbook consists of 160 recipes which are easy to make, and are grouped by the four seasons with five variations (appetizers, salads, side dishes, main dishes and desserts).
